Spring rain in the forecast encouraged me to make delicious soup for dinner!
I enjoy spices on my whole food + lately my palette cannot get enough of vindaloo curry.

Here is the ingredients list for a Vindaloo spice mix* that I used on my potato, carrot + green bean soup. Several items are available for purchase at my go-to food distributor Azure Standard. By clicking on links in my post you will be able to visit their website!
If you sign up for a free account + shop with them within 60 days, buying over $100 of products, then I receive a small credit towards my next Azure Standard purchase. Every customer who creates an online account may participate in their Share Azure referral program! Credit earned helps to buy delicious food + cookware to make recipes like this one!

To prepare, use 6 fresh potatoes diced or just pour frozen diced potatoes into your crockpot.
Add one can of Cream of Celery soup + 4 cups of fresh water too.
Chop 3 fresh carrots + also add frozen green beans to the pot.
Add salt to taste + add Vindaloo spice mix* to taste.
Turn the crockpot on High setting, place the lid on the pot + cook for 4 hours.
When it's ready, use a ladle to put the warm soup into bowls.
* Vindaloo Spice Mix Ingredients (all organic):
Tomato powder, cumin, chili pepper, cayenne pepper, turmeric, coriander, cinnamon, yellow mustard, fenugreek, garlic, ginger, black pepper, cardamom + cloves.
Azure Standard sells a Curry Blend Spice mix, but I notice that their version includes Allspice + Fennel but does not include:
chili pepper, cayenne pepper, cinnamon, garlic, cardamom or cloves. So, the result would be a soup that is a bit milder in taste if you added their prepared mix to your creation.
In my research, I found that some recipes call for bay leaves, onion, sugar + even white wine vinegar. These were not included in tonight's soup.
I hope you enjoy this information!
Happy Shopping!
